Keto Breakfast Yogurt Trifle

September 17, 2017 by Easy Keto Living

Keto Breakfast Yogurt Trifle Recipe – Quick and Easy Low Carb Ketogenic Diet Breakfast Idea that has no eggs and is wonderfully simple.

Keto Breakfast Yogurt Trifle Recipe - Quick and Easy Low Carb Ketogenic Diet Breakfast Idea that has no eggs and is wonderfully simple.

Keto Breakfast Yogurt Trifle Recipe

This breakfast is sooooo easy to prepare and can be adapted depending on your tastes and what you have in your kitchen. Breakfast trifles are fun keto friendly breakfasts when you’re tired of eggs.

You simply layer your favourite low carb, keto friendly ingredients in a glass or mason jar and enjoy.

Regarding yogurt – find the lowest carb yogurt you can. I’ve found that either Greek Yogurt, Natural Yogurt or even Coconut Yogurt are my go to keto friendly yogurt options.

If the yogurt you’ve found is low fat, then simply add some healthy fats to bring the fat content up. Your options include stirring through some cream, coconut oil or MCT Oil to turn a low fat yogurt into a high fat, keto friendly yogurt.

You can have berries on the Keto Diet. I’ve had 3-4 strawberries a day throughout my Keto Diet journey and it’s had no impact on my weight loss. It’s easy to go overboard, so just be strict and limit yourself to a few a day and you’ll be great!

Keto Breakfast Yogurt Trifle Recipe - Quick and Easy Low Carb Ketogenic Diet Breakfast Idea that has no eggs and is wonderfully simple.

To prepare your trifle, simple any (or all) of the following options in a glass or mason jar and enjoy:

  • Low Carb Yogurt
  • Berries – Strawberries, raspberries or blueberries
  • Nuts – Almonds, Walnuts, Macadamias
  • Seeds – Chia, pumpkin, sunflower
  • Cream – for added fat, mix some cream through your yoghurt or even top the finished trifle with whipped cream
  • Fats – add additional fats with Coconut Oil or MCT Oil

Feel free to mix and match the above to create your dream Keto Breakfast Trifle. I’ve shared what I included in mine below.

Low Carb Pumpkin Mash

Low Carb Pumpkin Mash Recipe – Keto Mashed Cauliflower Potatoes Substitute Recipes – great for fall or as Thanksgiving sides and is gluten free, made with healthy butternut squash and butter.

Low Carb Pumpkin Mash Recipe

Low Carb Pumpkin Mash Recipe

This dish is the result of a happy accident. I had wanted to make pumpkin soup, but only had a little in the fridge, along with heaps of cauliflower.

So, I cooked them up and then decided to drain the cooked pumpkin and cauliflower and try mashing them together instead of having as a soup.

The result? A creamy, luxurious mash that’s irresistible!

As pumpkin is quite high in carbs, but still allowable on the keto diet, a little goes a long way with this dish.

Heating pumpkin and cauliflower together

Volumes haven’t been specified because it really depends on how pumpkin heavy you want your mash and how creamy you want it.

You can also boil up a couple of garlic cloves for a garlic infused mashed cauliflower and pumpkin.

To make the keto mashed pumpkin, ou simply cook the cauliflower and pumpkin together until soft and mashable. Then you mash it all together with cream and butter. Perfection!

Low Carb Eggnog Recipe

September 10, 2017 by Easy Keto Living

Low Carb Eggnog Recipe – Keto Egg Nog Dessert that’s sugar free, creamy and delicious.

Mug of low carb eggnog

Low Carb Eggnog Recipe

Eggnog is great all year around and this recipe is so easy and the finished sweet treat tastes almost like a creamy custard.

It’s really just a matter of whisking your ingredients together and gently heating over the lowest heat to cook your eggs, without scrambling them.

Some enjoy eggnog with raw eggs (and even rum included) – I prefer to cook mine and have it without rum. But – feel free to be inspired by this recipe and then adapt it to your tastes.

In my pre-keto days, I loved using maple syrup as a sweetener, especially in eggnog. So, you can imagine my delight when I got my hands on Maple Flavor, which brings the deliciousness of maple syrup without the carbs.

Whisking Maple Flavor into sugar free egg nog

You can enjoy your low carb eggnog warm in a mug, or allow to cool completely and enjoy chilled in a glass and topped with whipped cream.

  3. Cook, whisking continuously, until the eggs have just cooked, the eggnog has thickened and it coats the back of a spoon.
  4. Enjoy warm or cool, then place into the fridge to chill.

Keto Breakfast Scramble – Easy Low Carb Ketogenic Diet Breakfast Recipes and Ideas

Keto Breakfast Scramble - Easy Low Carb Ketogenic Diet Breakfast Recipes and Ideas

Keto Breakfast Scramble

Sometimes you can feel a little stuck with keto breakfasts – how many ways can you really have eggs and vegetables? Well, I prefer to embrace the ingredients that I can have and come up with fun and colourful bowl fulls for breakfast.

I’ve been experimenting with intermittent fasting lately, so have been having loads of vegetables with my 2 meals of the day. When intermittent fasting, it’s really important to make sure that you still meet your macros if you’re having fewer meals.

This keto breakfast scramble, does just that. It’s packed full of vegetables and protein and leaves you feeling so full that you just forget about your next meal.

In the below recipe I’ll walk you through how I constructed this exact keto breakfast scramble. Feel free to substitute in your vegetables and meat of choice.

Also, I haven’t specified volumes because it really depends on how many people you’re feeding and how hungry they are. This pan full was for myself and my Husband and there was also a portion leftover at the end. (I have a problem with over-catering, but then that means that there’s always heaps left over for the next meal/s!)

Easy Keto Chicken and Broccoli Recipe with a creamy cheese sauce. A quick and simple Low Carb Chicken Thighs Alfredo Stir Fry idea that makes one the most perfect Ketogenic Diet Dinner Recipes.

Easy Keto Chicken and Broccoli Recipe

This dish is sooooo easy to put together and tastes AMAZING. A warm and nourishing bowl full that’s wonderfully low carb, high fat and so cheesy. A perfect keto diet dinner.

Thighs are my favourite piece of chicken – they are just so juicy and flavourful that I pick them any day over other chicken pieces. And, cooking the chicken in the creamy sauce almost poaches it, making it extra juice and tender.

To make it easy to chop each thigh into bite sized pieces, I like to use kitchen shears for the job. In fact I have a pair just for chopping chicken because it makes the task so incredibly easy.

Strawberries and cream is my absolute, all time, go to keto dessert. What’s simpler than a bowl full of strawberries topped with a (generous) swirl of cream?

Well, this low carb strawberries and cream shake recipe is like drinking a bowl full of strawberries and cream!

Of course I have to top my shake with a swirl of whipped cream. Because – whipped cream!

This makes an excellent keto dessert, but I’ve also had it for breakfast as it’s really a complete keto meal when you add the optional low carb protein powder. (Find low carb protein powder here.)

I like to add protein powder to my shakes and smoothies as I have a lovely vanilla flavoured protein powder which thickens and sweetens while adding a portion of protein to my drink.

Best Keto Snacks

Here are the easy keto snacks ideas that you can easily find at your local grocery store:

1. Salami – sticks, chopped, or whole salami finds it’s way into a snack box more often than not. I always have some of the high protein snack in the fridge and I make sure I buy more every week with my groceries to snack on as a portable snack.

Beef jerky

2. Jerky – watch carefully for added sugar and hidden carbs, otherwise, beef jerky makes an excellent ketogenic savoury snack.

Bonus – another meaty snack option is pork rinds, which make the perfect crunchy, salty great keto snack alternative to potato chips.

Dark Chocolate Choices

3. Dark Chocolate – a row or two makes a quick snack that satisfies your sweet tooth and is always easy to find when you’re out and about. The sweet treat is the perfect snack to enjoy when you’re following a keto lifestyle.

Nut options

4. Nuts – almonds, cashew nuts, pecan nuts, macadamia nuts and pine nuts make a great protein rich low carb snack. Just make sure you exercise portion control because carbs can add up quickly with nuts.

Seeds

5. Seeds – pumpkin seeds, sunflower seeds and chia seeds are another great quick grab and go keto snack option.

6. Nut Butter – a packet of almond butter has saved me on a number of occasions, especially on road trips! Enjoy straight from the packet or sandwich a couple of pieces of dark chocolate together with some nut butter. (You’ll thank me later!) You could also opt for peanut butter, cashew butter, macadamia butter or any other nut butters you can find.

17 Keto Snacks On The Go Ideas - Avocado

7. Avocado – a half or even a whole avocado is one of the most perfect keto snacks on the go. Just remember to pack a knife/spoon if you’re taking it out and about whole.

Keto Strawberries and Whipped Cream Dessert in a bowl

8. Strawberries – I’ve had 3-4 strawberries a day as a snack through most of my keto diet weight loss journey and look forward to the sweet treat each day, which helps keep my sugar cravings at bay.

Vegetable snacks

9. Sliced Cucumber – I’ll often slice up a whole cucumber to take out to the park to share with my kids, it’s a crunchy snack the whole family loves.

10. Cherry Tomatoes – maybe I’ll pop a couple in with the cucumbers for a little pop of colour and flavor variation.

A selection of keto snacks packed in a container - meat, pickles, avocado, cheese and nuts

11. Pickles – the perfect low carb salty snack that’s wonderful enjoyed on it’s own or you could dip a couple of pickles into sour cream for an extra sour hit. While I prefer pickles, my husband prefers kalamata olives, which are another options for keto dieters who are looking for snacks with virtually zero carbs.

Tuna

12. Tin of Tuna – perfect protein which you can add a dollop of healthy fats to make an instant tuna salad to satisfy your snack cravings. I like to mix through either mayo, sour cream, cream cheese or even avocado oil. I have also been known to each tuna straight from the tin with the help of a take away fork!

You could also top cucumber slices or celery sticks with tuna mayo for a low-carb diet approved snack that’s low in grams of net carbs.

If you’d like, you could even whip together a tuna salad lunch box with a tin of tuna and a few of the other items mentioned in this list. (I show you how here!)

Keto Tuna Salad Lunch Box - with strawberries and almonds

13. Grated Cheese – it really doesn’t get any easier than buying ready grated cheese, such as cheddar cheese, mozzarella cheese or parmesan cheese, that can be used in any number of low carb, high fat ways. Even just enjoyed by the handful as a snack!

Cheese options for keto snacks

14. Brie – maybe not a whole wheel of brie, but a portion can make a delicious snack. Though, I have shared a whole wheel with my Husband in the past – so don’t feel bad if you have more than a small portion.

15. Boccocini – my Husband takes a tub of mini boccocini to keep in the fridge at work each week and snacks on them when he feels like it. You may prefer string cheese or another cheese option as keto-friendly snacks.

Hard boiled eggs

16. Leftover Meat/Chicken/Hard Boiled eggs – there are always leftovers lurking in my fridge which can be thrown into a lunch box to snack on while out and about.

17. Green Leafy Veg – it’s easy being green! Just enjoy greens on their own or simply topped with good fats like olive oil or melted coconut oil and sea salt salt if you want a great snack option but don’t feel like a whole salad of a meal.

What Makes a Snack Keto-Friendly?

Keto snacks are generally based around foods that are relatively low in carbohydrates, with the exact amount depending on your individual carbohydrate target. Foods such as meat, fish, eggs, cheese, nuts, seeds and many non-starchy vegetables can be useful options. Always check nutrition labels, particularly on packaged foods, as sauces, marinades and added sugars can increase the carbohydrate content.

How to Pack Keto Snacks for On the Go

A small lunch box or divided snack container makes it easy to combine several keto-friendly foods. Try pairing a protein-rich food such as boiled eggs, tuna, salami or cheese with a small portion of nuts, vegetables or berries.

For longer journeys, use an insulated lunch bag and ice pack for foods that need to stay chilled.

Low Carb Dark Chocolate Bark Recipe

Low Carb Dark Chocolate Bark with Toasted Almonds – Easy Keto Chocolate Candy Recipes – How to make sugar free almond chocolate bark candy. Keto Chocolate Fat Bombs Fun!

Low Carb Dark Chocolate Bark with Toasted Almonds

Low Carb Dark Chocolate Bark Recipe

This low carb dark chocolate bark tastes AMAZING! The easy recipe includes such simple ingredients, yet together they make such a sophisticated keto chocolate candy that you won’t believe you’re indulging in a low carb treat that will help you meet your macros and health and weight loss goals.

It’s up to you if you’d prefer to double the recipe. Personally, I prefer to have a small amount to hand, otherwise I demolish it all WAY too soon.

This would make excellent homemade gifts for friends or loved ones, especially during the holiday season – but it’s also a delicious Keto Treat to make for yourself to satisfy your sweet tooth!

Melted chocolate topped with almonds about to go into the fridge

Butter is used in this bark recipe for it’s creamy texture and because butter really makes everything better…

And it’s especially true with this low carb chocolate bark – the butter results in a smooth, creamy dreamy bark that’s irresistible! You could of course swap the butter for coconut oil if you’d prefer for the sweet treat to be dairy free.

I’ve used almonds in this keto almond bark but you can feel free to add in macadamia nuts, pecan nuts, walnuts, sunflower seeds, unsweetened coconut flakes or any other low-carb diet friendly nut or seed you like.

The darker the chocolate you use, the lower the net carbs and higher the healthy fats tend to be, while still satisfying your chocolate cravings. I used 85% Lindt Chocolate and sweetened with 1 Tablespoon of Stevia for the perfect sweetness for me.

Feel free to use your unsweetened chocolate bar or dark chocolate chips of choice and adjust the sweetness in the keto bark recipe accordingly. You can also swap the stevia for monk fruit sweetener or your keto sweetener of choice.

Low Carb Dark Chocolate Bark with Toasted Almonds

Keto Chocolate Bark Recipe

  • 1/2 Cup Almonds
  • 100g/3.5 ounces Dark Chocolate Bar or Sugar Free Chocolate Chips
  • 2 Tablespoons Unsalted Butter
  • 1 Tablespoon Stevia
  1. Heat a frying pan and when hot briefly toast the almonds until fragrant.
  2. Remove to a heatproof bowl to cool.
