These 5 best high fiber keto foods can easily be incorporated into your daily meals in plenty of tasty ways.

It’s important that you’re getting enough fiber, which can be difficult when you’re on a low carb diet like the keto diet. Fiber helps regulate your blood sugars, among other benefits. (Source.)

So, being aware of the best foods to consume that are high in fiber as well as keto friendly, will help you meet your daily fiber intake requirements and keep you healthy.

Keto Pumpkin Brownies

These keto pumpkin brownies are a decadent sweet treat to make during pumpkin season when you’re craving all things pumpkin.

They are dark, chocolatey and naturally sweetened thanks to the inclusion of pumpkin puree that has natural sugar flavor.

For the puree, you can use canned pumpkin puree – just make sure that it’s unsweetened. Or, make homemade pumpkin puree yourself by boiling or roasting pumpkin, allowing it to cool and then blend the sweet flesh to a puree in a food processor.

For the dark chocolate in the chocolate brownies, you can use whatever low carb, keto friendly chocolate you usually include in your keto diet. I find that 85%, 90% or higher tends to be the lowest in carbs and sugars.

You can break up a block of chocolate or use chocolate chips in the keto brownies.

If you’d like, you can add in a few tablespoons of cocoa powder or raw cacao powder for added chocolate flavor or swirl almond butter or peanut butter through the brownie batter for peanut butter swirl sugar free pumpkin brownies.

For spiced traditional brownies for the holiday season, add in a half a teaspoon to a teaspoon vanilla extract, ground cinnamon, pumpkin pie mix or pumpkin spice blend.

You can enjoy the ketogenic diet friendly flourless brownies as the perfect fall dessert topped with keto chocolate whipped cream frosting.

Keto Chocolate Pumpkin Brownies Recipe

  • 3.5oz/100g Keto Chocolate (like this)
  • 3.5oz/100g Butter
  • 2 Tablespoons Stevia, Monk Fruit Sweetener or your low carb sweetener of choice
  • Pinch of Salt
  • 1/2 Cup Pumpkin Puree
  • 2 Eggs
  • 1/4 Cup Coconut Flour
  1. Preheat the oven to 350 degrees F or 180C and line a baking dish with well greased baking parchment paper.
  2. Place the chocolate and butter in a small saucepan, place on the stove top over medium heat and cook until melted.
  3. Pour the melted chocolate mixture into a large bowl.
  4. Whisk in the stevia, salt, pumpkin and eggs until smooth.
  5. Gently stir through the coconut flour until fully incorporated.
  6. Pour batter into the prepared baking tin.
  7. Place into the preheated oven for 20 to 25 minutes or until cooked through.
  8. Remove from the oven, allow to cool to room temperature and then cut the healthy pumpkin brownies into bite sized pieces to enjoy as the perfect dessert.

Easy Keto Granola Recipe

This easy chocolate granola recipe is nutty, chocolatey and makes an indulgent breakfast treat.

A while back I shared another simple low carb granola recipe which has been really popular on the blog. So, I set about to create a chocolate version, complete with crunchy clusters.

Low Carb Granola Ingredients

Ingredients for low carb granola

Here are the ingredients that you’ll need for this recipe, most of them are easy to find at Amazon or even budget friendly ALDI.

Seeds – I find that bulking out the granola with sunflower seeds helps keep the granola budget friendly.

Nuts – almonds and cashews are included in this particular recipe. You can feel free to include any chopped nuts you like, instead.

Coconut – to add in sweetness, texture and coconut flavor.

Mixing the ingredients together in a bowl

Stevia – or you sweetener of choice to sweeten the granola without adding sugars or carbs.

Chocolate – I’ve included both cocoa powder and cacao nibs for an intense chocolate hit through the granola.

Coconut Oil – to help bind the granola together and add healthy fats.

Homemade granola

Easy Keto Granola Recipe

  • 1 Cup Sunflower Seeds
  • 1/4 Cup Chopped Cashews
  • 1/4 Cup Chopped or Sliced Almonds
  • 2 Tablespoons Stevia
  • 2 Tablespoons Shredded Coconut
  • 1 Tablespoon Cacao Nibs
  • 2 Tablespoons Cocoa Powder
  • 1/3 Cup Coconut Oil
  1. Preheat the oven to 250F/100C and line a baking tray with parchment paper and grease it well.
  2. In a large bowl, combine together all of the ingredients except the coconut oil and stir until well mixed.
  3. In a small saucepan melt the coconut oil and then pour it over the granola mixture.
  4. Pour the granola mixture onto the prepared baking tray and flatten it down so that it’s all in a single layer.
  5. Move the granola to the preheated oven and cook for 20 minutes.
  6. Remove from the oven, toss the granola and return to the oven for a further 20 minutes and toss the granola once again.
  7. Cook for a final 20 minutes or until golden and cooked to your liking.
  8. Once done, remove the granola from the oven and allow to cool . The longer you leave the granola, the more clusters will form.
  9. When you’re happy the granola is cool enough, break it into clusters.
  10. Once completely cooled, store in an airtight container and enjoy with low carb milk or yogurt.

The chicken becomes crunchy and crisp thanks to the simple low carb crumb mixture.

You can enjoy this chicken dish as is or with one of the following easy sides:

These are the ingredients included in the crumb mix:

Parmesan – gives the chicken a crisp, cheesy coating.

Almond Flour – is the perfect low carb breadcrumb alternative.

Salt – use a generous shake of sale.

Oregano – is my herb of choice, add as little or as much as you like.

Paprika – brings out the best in the fried chicken tenders.

Pepper or your herbs and spices of choice – to create your own unique crispy crumbed chicken.

Keto Fried Chicken Recipe

  • Chicken Thighs or Breasts
  • 2 Tablespoons Sour Cream
  • 1 Egg
  • 1/2 Cup Almond Flour
  • 1/2 Cup Parmesan
  • Oregano
  • Paprika
  • Salt
  • Pepper or other seasonings/spices, to taste
  1. Cut the chicken into tenders.
  2. In a small bowl, mix together the sour cream and egg until smooth.
  3. Dunk the chicken into the egg/sour cream mixture, toss the chicken around and place into the fridge to marinate for a few hours, or overnight.
  4. When you’re ready to fry the chicken, heat coconut oil or butter in a frying pan and remove the chicken from the fridge.
  5. While the pan is heating up, make your crumb mixture by combining together the almond flour, parmesan, oregano, paprika, salt, pepper and any other seasoning you like.
  6. Dip the chicken into the crumb mix, a piece at a time and then move it to a plate.
  7. Once the frying pan is hot enough, cook the crumbed chicken until golden on both sides and fully cooked through.
  8. Move to plates and enjoy!

These keto almond flour cookies have only 4 ingredients and are incredibly easy to make.

It’s really just a matter of whisking an egg white until thickened, then whisking in stevia and vanilla before folding in almond flour until you have a cookie dough.

These cookies make a brilliant bite sized treat on their own or you could sandwich a couple together with keto lemon curd or keto cream cheese frosting.

Egg White – only 1 egg white is needed in this recipe. You can save the egg yolk and pop it into an omelette or scrambled eggs.

Stevia – you can use your sweetener of choice in this recipe and as little or as much as you’d like, depending on how sweet you’d like your cookies to be.

Vanilla Extract – to subtly flavor the cookies.

Almond Flour – the low carb flour used in these cookies, use blanched almond flour for smooth cookies.

Keto Almond Flour Cookies Recipe

  • 1 Egg White
  • 1/4 to 1/3 Cup Stevia
  • 1/2 to 1 teaspoon Vanilla Extract
  • 1 Cup Almond Flour
  1. Preheat the oven to 350F/180C and line a baking tray with well greased baking paper. 
  2. Using electric beaters, whisk the egg white until thickened. 
  3. Add the stevia and whisk until smooth.
  4. Add the vanilla, then whisk until thick and glossy. 
  5. Fold through the almond flour until fully incorporated and you have a cookie dough. 
  6. Drop a teaspoon per cookie onto the prepared baking tray.
  7. Move the cookies to the preheated oven and bake for 10 to 15 minutes, or until done to your liking. 
  8. Remove from the oven, allow to cool to harden and then enjoy.

Lazy Keto For Beginners

This lazy keto for beginners guide will give you all the tips and meal ideas to start a low-carb lifestyle without the stress.

The ultra low carbohydrate diet can be followed in a number of different ways, including a traditional ketogenic diet or standard keto diet, clean keto, lazy keto or a dirty keto diet. 

In this blog post I’m going to focus on the lazy keto approach, which I find to be one of the easiest ways for starting keto, especially for keto beginners who are new to the unique way of eating.  

What Is The Lazy Keto Diet?

In short, Lazy Keto is following the low carb and high fat Ketogenic Diet, but without counting or tracking calories, exact carb intake or macros that you usually would on a traditional keto diet.

Instead, you fill your plate (and day) with low carb, high fat foods and meals that naturally see you consuming low enough carbs in your daily carb count to help you transition into Ketosis. (And stay there!)

Can You Still Lose Weight Doing Lazy Keto?

You absolutely can still lose weight while following a lazy keto meal plan instead of a strict keto diet, and also be able to enjoy a whole host of overall health benefits.

By learning about the low-carb diet friendly foods you can and can’t have, you can simply eat all the permitted foods, and stay far away from those that aren’t keto friendly.

So, what foods are keto friendly? I try to include as many whole foods in my diet as possible, but there are also a number of keto fast food options for those of you who need to follow a low-carbohydrate diet while on the road. 

Here’s a concise list of food choices for you that are all naturally low in net carbs so that you can enjoy the many benefits of lazy keto and be able to achieve your own personal health and weight loss goals.

Low Carb Vegetables –  I aim for a serve of low carb vegetables with each meal, so that I get enough nutrients while also keeping my carbohydrate intake as low as possible.

These are my go to low carb vegetables  that I usually include on my grocery list:

  • Mushrooms
  • Spinach
  • Broccoli
  • Cauliflower
  • Zucchini
  • Cucumber
  • Radish
  • Onion
  • Garlic
  • Red Pepper
Keto dairy options

Dairy – full fat dairy are nutrient-dense foods that play an important role in helping you feel fuller, are generally low in grams of carbs and make meals more exciting to your taste buds on a low carb type of diet. I enjoy all kinds of cheese, cream, sour cream and cream cheese regularly with meals.

Healthy Fats –  coconut oil, olive oil and avocado make up some of the healthy fats you can enjoy on keto that are easy to find at the grocery store and can be used in all kinds of lazy keto recipes.

Eggs – I start most days with eggs of some sort, whether that’s fried, scrambled or hard-boiled eggs,  and have happily enjoyed a couple of eggs a day though my keto journey as a brilliant, budget friendly protein source.

Protein – tuna, beef, salmon, chicken and other meat can be consumed on keto for your protein intake. You can also keep a keto protein powder in your pantry that makes a great option if you struggle to consume as much protein as you need.

Foods To Avoid – if your aim it to get into a metabolic state of ketosis, then your best bet is to avoid foods that contain sugar and high amounts of carbs including food items such as bread, whole grains, sugary baked goods, sugar, starchy vegetables such as potatoes, chips, crisps, crackers, pizza and pasta. 

Lazy Keto Meals

Now that you have an idea of what foods are low carb and keto friendly, here are some lazy keto meal ideas to help you with meal planning for your weight loss journey.

There are also loads of ideas for a Keto Breakfast Without Eggs, such as homemade keto granola, yogurt, a smoothie or even breakfast cookies.

Lunch Ideas – for lunch, I tend to have a salad of some description, with some my favorites being a tuna salad or the above pictured steak salad.

This keto chocolate ganache recipe makes a quick and easy frosting that’s low in net carbs and will please all chocolate lovers.

You can use the sugar-free ganache for frosting cakes like an indulgent chocolate cake (like this one) or to enjoy with a low carb friendly sweet treat, like as an indulgent dipping sauce for fresh raspberries or strawberries for a special day like Valentine’s Day.

How to make low carb sugar free chocolate frosting

Here are the simple ingredients that you’ll need for this simple frosting:

Low Carb Chocolate – use an 85% or 90% chocolate bar or sugar-free chocolate chips so that the good ganache is keto friendly.

Unsalted Butter – he addition of butter provides a richness and texture to the ganache. You can feel free to swap the butter for coconut oil or cocoa butter if you’d prefer. 

Stevia – use your low-carb sweetener of choice and as much as you’d like, depending on how sweet you want your chocolate ganache frosting to be.

Cream – only a little heavy cream is needed to bring creaminess, healthy fats and smooth texture to the frosting. You can swap the heavy whipping cream for coconut milk, almond milk or coconut cream if you’d prefer the chocolate sauce to be dairy free.

You can also add in a pinch of salt or half a teaspoon of vanilla extract to enhance the flavor of the end result.

You’ll find that the longer you leave the cooked easy chocolate ganache to cool at room temperature, the thicker it will become.

You can also move the cooled, smooth ganache to a piping bag to swirl indulgently over your chosen sweet treat. 

So, it really depends on how you’ll be enjoying the best chocolate treat, whether you use the thinner ganache straight away at pouring consistency or wait a little bit longer for a thick, indulgent chocolate frosting.

If you’d like to adjust the texture, simply add a little cocoa powder to thicken or a little more cream to thin to more of a pouring consistency over ketogenic diet treats for a special occasion like a keto chocolate cake.

Keto Chocolate Ganache Recipe

  • 1.76/50g ounces Low Carb Chocolate or Dark Chocolate Chips
  • 0.88/25g ounces Unsalted Butter
  • 1-2 Tablespoons Stevia 
  • 3 teaspoons Cream
  1. Place all of the ingredients into a small saucepan.
  2. Move the saucepan to the stove top over medium heat.
  3. Gently heat the saucepan until the chocolate and butter have completely melted and you have a glossy rich chocolate ganache.
  4. Allow the warm ganache to cool and thicken at room temperature, then pour over a cake, chocolate cupcakes, ice cream or enjoy with a low carb friendly sweet treat, storing any leftovers in an airtight container.

This keto yogurt breakfast can easily be adapted to your own tastes, macros and what’s easy for you to find at your local store.

This is the perfect bowl full to start your day with when you don’t feel like eggs for breakfast.

When choosing an appropriate ket friendly yogurt, your best bet is a Greek, plain or natural variety without sugar or other added carbs.

If the yogurt you have found is low fat, then you can raise the fat content by mixing through some cream. Or, topping your bowl with plenty of healthy fat loaded whipped cream.

Keto friendly yogurt it usually unsweetened and can be more sour than you’re used to. So, you can sweeten your yogurt, if need be, with stevia or your sweetener of choice

You can top yours with a couple of teaspoons of chia seeds, which is a great source of low carb fibre plus a host of  essential vitamins and minerals.

  • Shredded Coconut
  • Flavour – you can mix through vanilla, orange or even mint essence for a flavoured yogurt
  • Chocolate – create a chocolate yogurt creation with cacao or even a little bit of grated dark chocolate
  • Cheesecake – you could mix through of layer cream cheese or mascarpone cheese for a cheesecake yogurt experience

  2. Top with a few teaspoons of yogurt and a handful of blueberries. 
  3. Finish with a final few teaspoons of yogurt and top with raspberries and any other optional toppings of choice. 
  4. Enjoy immediately or store in the fridge for a few hours before consuming.

This easy keto spaghetti bolognese has only 3 ingredients and is quick to prepare. (And enjoy!)

You may wonder how just 3 ingredients can create an (almost) authentic spaghetti bolognese dish.

Each of the 3 elements plays an important part in helping the meal taste almost identical to a carby version but is significantly lower in grams of net carbs.  This keto spaghetti recipe really is that simple!

The three ingredient, basic recipe includes only the following low carb diet foods –

Beef Mince – I tend to use the highest fat ground beef mince I can find, which is usually economically budget friendly. You could mix it up and use any mince you’d like such as ground pork, ground turkey or lamb for a different meaty flavor. (For more budget inspiration, here’s my cheap keto grocery list.)

Low Carb Pasta Sauce – find the lowest carb pasta sauce you can, one without added sugars or hidden carbs. The tomato sauce brings plenty of flavor without the need for additional ingredients.

You can of course add in chopped onion or a couple of peeled and chopped cloves of garlic, a half a teaspoon of Italian seasoning or basil to flavor your keto bolognese sauce further. 

You can just as easily make your own sauce by combining together a can of chopped tomatoes with your seasoning and flavoring of choice, then storing in mason jars in the fridge to use in this and other low carb alternatives. (Here are more keto sauces that are easy to make.) 

Low carb cabbage noodles

Cabbage – is my keto friendly pasta alternative of choice, simply slice the cabbage into traditional spaghetti sized pieces and then cook until softened to create the perfect keto noodles.

You can feel free to swap the cabbage noodles for other popular keto diet friendly pasta alternatives such as zucchini noodles, Shirataki noodles, miracle noodles, hearts of palm noodles. spaghetti squash or any other low-carb spaghetti that you can get hold of at local grocery stores. 

You can go beyond the three simple ingredients if you want to and include as many of the following keto friendly foods in your dish as you’d like in the ragu sauce:

  • Onion
  • Garlic
  • Mushrooms
  • Red peppers
  • Broccoli
  • Cauliflower – chopped or cauliflower rice
  • Red wine
  • Heavy cream
  • Tomato paste
  • Bay leaves

I like to top my  low carb spaghetti bolognese bowl full with plenty of grated cheese, including a mix of one or more of cheddar cheese, mozzarella cheese and parmesan cheese. You can also top your homemade bolognese sauce with fresh herbs and seasoning to taste. 

3 ingredient low carb dinner idea

Keto Spaghetti Bolognese Recipe

  • 500g/1.1lbs Beef Mince
  • Jar of Low Carb Pasta Sauce
  • 1/4 to 1/2 Cabbage or Low-Carb Noodle Substitute
  1. Heat about a tablespoon of olive oil, coconut oil or butter in a large frying pan over medium-high heat.
  2. When hot, add the beef mince.
  3. Cook the ground meat until browned on all sides.
  4. Once the meat has browned, add the jar of pasta spaghetti sauce.
  5. Bring the bolognese up to the boil.
  6. Meanwhile, slice the cabbage into noodles and then add to the bolognese sauce.
  7. Reduce to medium heat, then cook until the cabbage noodles have softened and the sauce has reduced.
  8. Serve as is or topped with grated parmesan or cheese, moving leftovers into airtight containers to enjoy the next day.

The homemade keto spaghetti dish is also a brilliant meal prepping recipe that you can portion out into individual glass containers to grab through the week for speedy meals to help you stay on track with your ketogenic diet when there’s no time to cook.

There are only 4 ingredients in these easy keto chocolate cupcakes. And the batter comes together really quickly using just a food processor.

4 Ingredients for the cupcakes in the food processor

Here are the 4 ingredients you’ll need to create these cupcakes:

Almonds – use whole, blanched almonds. Which are almonds that are skinless. (Like these on Amazon.)

I like to lightly toast my almonds in a frying pan to give the cupcakes a full, roasted flavor.

Chocolate cupcakes batter

Low Carb Chocolate – use 85% or 90% dark chocolate which is low in sugars. I went for a block I found at ALDI, but you could also use indulgent Lindt too. (Here it is on Amazon.)

Eggs – 3 eggs are needed to bind the cupcakes together.

Stevia – is my sweetener of choice. Feel free to use whatever sweetener you usually include in your diet. And, as little or as much depending on how sweet you’d like your cupcakes to be.

You can enjoy these cupcakes as they are or topped with whipped cream or keto cream cheese frosting.

Keto Chocolate Cupcakes Recipe

  • 7 Ounces/200g Blanched Almonds
  • 7 Ounces/200g Low Carb Chocolate
  • 3 Eggs
  • 1/3 to 1/2 Cup Stevia
  1. Preheat the oven to 350F/180C and line a 12 hole cupcake tin with cupcake liners.
  2. Heat a large frying pan and briefly toast the almonds until they are starting to lightly brown.
  3. Move the almonds to a bowl to cool.
  4. Once the nuts have cooled, pour them into a food processor.
  5. Chop the chocolate and add to the food processor.
  6. Crack the eggs over the nuts and chocolate.
  7. Add the stevia, to taste.
  8. Blend the ingredients together to create a dense cupcake batter.
  9. Once you have a smooth cupcake batter, drop 1-2 tablespoons of the batter per cupcake into the prepared cupcake tin.
  10. Place into the preheated oven for 20 to 25 minutes or until golden and done.
  11. Remove from the oven and enjoy once cooled.
